Vegan Wendy’s Frosty

I LOVE ice cream.

As a kid, trips to Wendy’s for a (large) creamy chocolate frosty was a weekend tradition. I don’t really want to think about all the sugar and chocolate and dairy I consumed in just one of those Wendy’s frosty’s (let alone weekend after weekend). Since then, I’ve realized, there is plenty of healthy ice cream available- we just need to know where to find it!

With the natural health market booming, there are so many new ways to enjoy ice cream in a healthy way- from store bought to homemade. If you don’t have time to make ice cream- here are some of our favorite store bought vegan ice creams…

Coconut Ice Cream:
This ice cream is made from coconut milk and is the creamiest, most rich non-dairy ice cream I’ve ever tried! It’s really got an authentic flavor so you hardly notice it’s not like regular ice cream. It’s by far my favorite and the So Delicious brand has some truly amazing flavors!

Soy Ice Cream:
If you eat soy, there are some good ice creams out there. This “chocolate obsession” flavor is delicious! I don’t eat much soy and it’s not my favorite of the non-dairy ice creams, but many prefer it best.

Rice Ice Cream:
Rice ice cream is pretty delicious! I have found my favorite flavors are along the lines of fruity to vanilla flavors because of it’s consistency (reminds me of sherbert or something like it). The texture is a bit more icey, but if you want a sherbert kind of treat- this is the way to go. PS: the lemon flavor is amazing!

These healthy ice creams also have a plethora of yummy flavors and are usually naturally sweetened! Store bought is really nice to have stocked in your freezer, but you can’t go wrong with a little homemade stuff. If you have a ice cream maker and a little time- a homemade vegan Wendy’s Frosty is worth the wait!

This ice cream seriously tastes like a Wendy’s frosty! We healthified the idea of a frosty and now this ice cream is a favorite summer time treat. It’s also one of the most guilt free ones too- because it’s non-dairy, refined sugar free and doesn’t contain any artificial chemicals or add ins!

 

Vegan Wendy’s Frosty’s
Print Recipe

1 1/4 cups Full Fat Coconut Milk
1/2 cup Coconut Creamer
1 cup Chocolate Almond Milk, unsweetened*
1/2 cup Cocoa
1 teaspoon Vanilla
1 cup Xylitol
6-7 drops liquid Stevia or 3 dashes powdered Stevia
1/8 teaspoon Sea or Pink Salt

*I used unsweetened chocolate almond milk, which is nice so you can completely control the flavors. If you decide to use the sweetened version, your ice cream will result in a slightly sweeter flavor and creamier texture so you will not need as much xylitol. You can decrease the xylitol by 1/4 a cup and adapt the stevia to taste, depending on your sweet preference.

Place your coconut milk in the freezer to chill for 30 minutes. In a medium sized bowl, whisk together the coconut milk, creamer and almond milk. Add the cocoa and mix well. Add the vanilla and xylitol. Whisk well to incorporate. Add the stevia and salt and whisk to combine everything. Pour the ingredients into your ice cream maker and freeze according to your ice cream makers directions. We use cuisnart ice cream makers which take about 25-30 minutes. Once frozen, you can enjoy immediately, or allow to freeze another 30 minutes to set and harden a bit more.

    I would agree – the So Delicious ones are by far my favourite too! Of course the coconut milk makes them a little high in fat/cals so that’s a sacrifice, but it’s worth it for the flavour!

    My boyfriend and I thank you…we’ve been wanting to make a healthier homemade ice cream forever but haven’t taken the time to come up with a recipe. We totally rock the So Delicious coconut ice cream…it’s all we buy. ;) Great post!
