Last week, I took great care to pick out a deliciously sweet, crisp and extra juicy watermelon by using all the usual tricks. I brought one home and when it was cut, I discovered that although it was juicy, it was way too mushy for my taste. I like my watermelon firm and crisp! Instead of being stuck with a huge watermelon that I wouldn’t eat (I mentioned awhile ago that my husband doesn’t love the fruit), I decided to turn this melon into something I would eat! When life gives you mushy watermelon, you’ve just got to make watermelon sugar free slushies!
Watermelon mushiness can be transformed into fruity, icy, foamy, healthy, juicy perfection.
This frozen drink is a cinch to whip up and chillingly refreshing. Superb watermelon or less than perfect watermelon will both produce a lovely cool treat. This is summer in a glass!
Watermelon Lime Slushies (vegan & gluten free)
2 cups frozen or very chilled Watermelon, peeled, deseeded and cut into large cubes
2/3 cup Ice
Juice of 1 Large Lime
8 Drops Liquid Stevia
Add the all the ingredients into a blender. Blend until smooth, icy and delicious.
