I had a craving for chocolate the other day, which is no surprise. However, when going to the pantry, hoping to find my favorite sugar free chocolate, there was none to be found. The only solution is baking! Since I was in the mood for chocolate, I found a basic cookie recipe sweetened with cocoa and I made a few healthy switches so that these cookies were all natural. I really like the combination of flavors I came up with.
I used almonds for this cookie because I wanted a nut that was naturally a little sweeter. The cocoa powder creates a nice chocolaty flavor and I added vanilla to increase the sweetness. I even chopped up some almonds to put in place of chocolate chips so each bite will have a bit of crunch! I particularly like this recipe for it’s nice balance of flavors from the cocoa, almonds and vanilla. It’s a deliciously simple cookie you’ll want to try!
Almond Chocolate Cookies

1/2 cup Butter
1 cup Powdered Honey or Coconut Sugar
1 Large Egg
1/2 teaspoon Pure Vanilla
1 cup Spelt Flour
1/2 cup teaspoon Salt
1/2 teaspoon Baking Soda
1/2 cup Almonds, chopped
Preheat oven to 375 degrees. Cream butter with powdered honey. Beat mixture until light and airy. Beat in your egg. Add all other ingredients except almonds. Add chopped almonds and mix. Cook for 10 to 11 minutes or 12 to 13 minutes if you want crunchy cookies.
