Let me let you in on a little secret. Waffles don’t have to be loaded with pounds of butter and sugar to be sweet, fluffy, decadent and delicious. Discovering this secret is one thing. Watching the secret ring true in your waffle iron is another. Coconut milk and applesauce do the trick! These ingredients create a super soft, fluffy waffle that is just impossible to get wrong.
These waffles are so delectable that my husband sometimes suggests these for dinner. They are lightly sweetened with a hint of apple and lots of cinnamon . Bonus to these waffles in our house is that they are one treat that my husband really enjoys making. Maybe because they are simple and stress-free but I think it’s because there’s always an air of excitement when that first golden waffle, piping hot comes off the iron. Who wants to miss that?
Top these with more applesauce and cinnamon for another alternative to the usual waffle toppings. They are sweet, delicious and perfectly apple-y. Enjoy!
Apple Cinnamon Waffles
2 Large Eggs at room temperature
3/4 cup Coconut or Almond Milk, at room temperature
1/3 cup Coconut Oil
3/4 cup Water
3 Tablespoons Applesauce
2 Tablespoons Coconut Sugar
1/4 teaspoon Salt
4 teaspoons Baking Powder
1 1/2 teaspoon Pure Vanilla Extract
1 Tablespoon Cinnamon
1 3/4 cups White Wheat Flour
Optional: 1 Tablespoon Flaxseed
Instructions:
Beat eggs and liquids together with apple sauce. If your milk or applesauce are really cold, it will harden the coconut oil in the mixture so make sure ingredients are not straight out of the fridge.
Add all other ingredients. Once you add the baking powder, it will begin to foam a bit, but that’s okay! Continue to mix until all combined and bake in a hot waffle iron. Top with your favorite toppings!

These were fluffy and delicious! I just subbed a banana for the 2 eggs and they turned out perfectly. I haven’t had good luck with vegan waffles they usually fall apart, but these didn’t! They are my new go to waffle recipe, can’t wait to share it with others! Thank you!
