Apricot Stuffed Dates

Holiday parties are soon upon us! When I’m entertaining, I like to think of holiday treats and dishes well in advance. I don’t want to stress over the appetizers before the party has even begun. Let’s prepare with simplistic dates.

I like to think of stuffed dates as “sophisticated” party food. They aren’t the most popular of foods, so they seem a bit more special. Stuffing dates make them even more fancy! I imagine these paired with decadent soft cheeses, specialty crackers, jams and pears for a beautiful party platter.

Sugar-Free Stuffed Dates

Not to worry, it’s easy and minimal effort on your part. Better yet, you can actually provide a healthy treat for your guests with stuffed dates. They are gluten-free and vegan. They are a delicious treat for anyone trying to cut sugar out of their diet and still enjoy sweet finger foods. As pretty as they are,  they make a great party treat because nobody expects pure raw foods and healthy sweeteners to be so simply delicious!

Apricot Walnut Stuffed Dates

1/3 cup Dried Apricots
1/3 cup Walnuts
1 1/2 teaspoons Pure Vanilla Extract
1/2 teaspoon Cinnamon
1 teaspoon Raw Honey
14-16 Large Dates, pitted

Instructions

In a food processor, combine the apricots, walnuts, vanilla extract, cinnamon and honey/agave. Process until the mixture is a rough paste.

Fill the apricot mixture in the pitted dates. Garnish with a drizzle of honey, if desired. Enjoy! Store any leftovers in an airtight container.

    I love snacking on dates especially dried figs. I’ve never seen these stuffed dates before, but this is pretty cool.

    Given the love that I have for dates, I am amazed I’ve never stuffed them! These dates look amazing – I love apricots and honey, so this recipe sounds perfect!

    […] #1 Marvelous is having brunch on Saturday with some friends at Chez Dre a popular brunch place in Melbourne where there is ALWAYS going to be a wait but it is worth it. Life of Pi I really enjoyed, I’ve tried to read the book before but found it hard to get into, now I’ve seen the movie I might try again. Big Fish was very strange, not in the usual way that I think of Tim Burton films being strange though. #3 Marvelous is one of my good friends being here from the UK till Thursday. We had her 30th birthday celebration yesterday afternoon. She is an inspiration to me as she has run the London marathon not once but twice!! I’m meant to really not drink in preparation for my race but she loves her red wine as do I so it is kind of hard not to have with her around #4 Marvelous is having a rest week this week with no exercise at all before my race. Last week when I was sick I had a few days off  but I can’t tell you the last time I took an entire week off. It was probably last year around the same time when I ran the City2Sea race here in Melbourne which is a 15km run.
