When I first saw the comedy “Morning Glory”, with Rachel McAdams, Harrison Ford and Diane Keaton, it was instantly memorable by the mention of something called a “frittata”.
Frittata’s are a delicious egg-based dish that can be filled with all the best flavors. Anything goes! The frittata plays a signifiant roll in this movie.
I liked the movie, but this frittata was the thing that really sparked my interest. In the movie, Harrison Ford’s character is a angry old journalist that has one great quality – he likes to make really good frittatas. According to this character, “the beauty of a good frittata is that it can be made with any ingredient. Anything that is in your refrigerator can be used.” Yes, let’s make this frittata happen with the best ingredients on hand.
I decided this hot frittata should be made in an easy and stove-free manner. I’m not entirely sure that taking the stove out of the equation qualifies this as a frittata, but nonetheless, I did without the pan and received great results for this tomato, basil and mozzarella frittata. After this sweet egg mixture was baked, the secret to a good frititta came to life. The scent of this dish told the secret well. That secret is pure, fresh ingredients. Organic fresh basil, sweet tomatoes and real good mozzarella. Baked in the oven, under high temperatures actually gives this egg based dish a nice crispiness that is similar to if cooked in a skillet. Without the crust of a quiche or the need of attention on the stove, this frittata is easy and oh so delicious.
Baked Tomato Basil & Mozzarella Frittata
5 Large Eggs
1/3 cup Almond or Coconut Milk
1 small Garlic Clove, minced
1/4 cup Chopped Fresh Basil
1/3 cup Chopped Tomato
1/3 cup shredded Mozzarella Cheese (can use dairy-free)
1/16 teaspoon Lemon Pepper
1/4 teaspoon Salt
1/4 teaspoon Pepper
- Preheat oven to 400 degrees. Grease a 9 inch pie pan or baking dish. In a mixing bowl, whisk together the eggs and milk. Add the minced garlic, basil, tomatoes and cheese. Add the rest of the seasonings and mix to incorporate. Pour the mixture into a greased dish.
- Bake the frittata for 18-22 minutes. It should be puffy and springy in the middle, the edges should be slightly browned and the top should have a nice golden color to it. Allow to cool slightly and enjoy!

This fills a pie pan (we use 9 or 10 inch). We found this amount to feed 4-5 people. But you could make it go further by serving other dishes with it. This recipe could also be doubled and baked in a 9 by 13 dish for a bigger group. Thanks!
