“Brown Sugar” Glazed Carrots with Pecans and Thyme

There is nothing complicated about this recipe. The ingredients here are sweet and simple. Roasting everything together makes them even more simple. Roasting under high temperatures, flavors fuse together for something so delicious it’s almost like dessert. And it’s almost effortless on your part!

"Brown Sugar" Glazed Carrots with Pecans and Thyme

These carrots are the best side dish for almost any menu. Let the oven do all the work here. You’ll hardly believe how easy it is to turn carrots into candy! All you need to know is how to work your oven!

 

“Brown Sugar” Glazed Carrots with Pecans and Thyme  (vegan & gluten free)

7 Whole Medium Carrots
3 Tablespoon Olive Oil
1 Tablespoon Molasses
1/3 cup Coconut Sugar, divided
1/2 teaspoon Kosher Salt
1 teaspoon Fresh or Dried Thyme
2 Tablespoons crushed Pecans

Pre-heat oven to 400 degrees. Line a baking sheet with parchment paper. Cover the carrots with olive oil, molasses, 1/4 cup coconut sugar and salt. Roast for 20 minutes. Stir contents and roast for another 10 minutes. Add remaining coconut sugar, pecans and thyme and roast for another 5-10 minutes, until the carrots are soft. Serve hot or warm.

Store any left overs in the fridge.

    O this sounds delicious! I’m usually so boring with my carrots – olive oil, salt, pepper, definitely switching it up this time, I’ve never done molasses before

    I’ve been meaning to do a brown sugar glazed carrot! It just so happens I have molasses and I’m needing to pick up more coconut sugar, so this recipe is bound to happen soon! Love the recipe and the carrots look like they came out great!
