Chocolate Covered Raisins Fudge

I love to snack on chocolate covered “healthy foods” like almonds, blueberries or raisins. Eating fruit or nuts totally justifies the chocolate! However, those foods are rarely covered with healthy chocolate… This dish gives that luscious fruity chocolate flavor using healthy chocolates in a rich, healthy fudge!

The mixture of raisins and chocolate combines flawlessly for a soft, chewy treat.

By the look of it, I hope you can tell the very dense texture of this fudge. It’s so moist and so dense, you’d think it’s almost a half baked batter. But it’s not! It’s a lovely raw dessert that is easy to make and totally vegan.

 The raisins give such a wonderful sweet flavor, this fudge doesn’t need any other added sweeteners.  5 ingredients and 5 minutes is all you need!

 

Chocolate Covered Raisins Fudge (vegan & gluten free)
Print Recipe

1 1/3 cup Raisins
3/4 cup plus 2 Tablespoons Cocoa
1 Tablespoon Water
1 1/2 Tablespoons Pure Vanilla Extract
1/2 teaspoon Sea Salt (optional)
1/2 cup Sugar Free Chocolate, melted OR this chocolate coating recipe (halved)

In a food processor or blender, mix up the raisins and water until it becomes a smooth paste. Add the cocoa, vanilla and salt and mix until well incorporated. Scoop up the batter and press into 2 small baking dishes or 1 bread pan. Chill in the freezer while you melt the chocolate. Pour the melted chocolate over the bars and freeze for 15-20 minutes. Then enjoy! Store any leftovers in the fridge

Yields 2- 5 inch fudge dishes

    Love the idea of putting the flavours all together in a fudge – brilliant. I am just like you – chocolate covered almonds? My favourite! Hey, there’s nuts in there, right??
