This last week, my husband Travis and I celebrated the night we brought Enzo home to stay- exactly one year ago! You can probably imagine how I felt when I saw this little face for the very first time….
His sleepy eyes and chubby little body confirmed he was the perfect dog for me!
In the last year, Enzo has been the perfect teacher of one particular virtue. Patience.
A little puppy can be a wonderful teacher of that important life lesson.
Recently, when it took 3 fails to create chocolate rice krispie treats, I was once again reminded of this patience. After each fail, I wanted to forget about patience and move along to something that did not result in me eating “cocoa puffs” for another week.
The other attempts tasted good, but were either too hard or too soft. I knew I wanted chocolate treats (yet different from these), didn’t want them to contain any soy or coconut and they absolutely had to be chewy.
Eventually, I was able to shout a big “thank you!” after I patiently learned from those trials to get something that worked. The final bars held together nicely, had a submissive, chewy bite and tasted richly chocolatey. All without a single marshmallow or gram of processed sugar made them worth the wait!
Chocolate Rice Krispies Treats

2 cups Natural Rice Krispies
1/2 cup Oats
1/4 teaspoon Salt
1/2 cup Coconut Sugar
3 Tablespoons Honey
2 teaspoons Water
1 ounce unsweetened Chocolate, chopped
1 1/2 Tablespoons Cocoa Powder
1 1/2 teaspoon Pure Vanilla Extract
Prepare an 8 by 8 baking dish by either lining it with parchment paper or lightly oiling it and set it aside.
Combine the rice krispies, oats and salt in a large bowl.
In a small microwave safe bowl, combine the coconut sugar, honey and water. Microwave for 1 minute, stirring every 10 seconds. The mixture will bubble up, but this is okay! After the 1 minute, add the chopped chocolate and stir. Microwave for another 5 seconds or so until the chocolate is completely melted.
Add the vanilla extract and cocoa powder. At this point, the mixture should look like a chocolate ganache. Quickly pour the mixture over the rice and oats mixture while it is still warm. Work quickly to stir and coat everything evenly. Pour the mixture in your prepared baking dish. Press firmly with damp hands to smooth out the mixture into the pan. Place in the refrigerator for 15 minutes until the mixture has become firm. Remove from the fridge, cut into slices with a sharp knife and enjoy!
