Here’s a nice change of pace. Breakfast for dinner is old news, but what about breakfast for dessert? If chocolate waffles are not in your dessert rotation already, you may want to give them a try!
This dessert is one that can have a “wow your dinner guests” factor. The smell of chocolate batter will evoke curiosity and when you carry these waffles out, piled high with lots of toppings (these waffles need toppings!) everyone will be jumping to dive in! We like ice cream with these but whipped cream, fresh fruit and a healthy drizzle of fudge sauce would do just fine! If you like the idea of ice cream, coconut milk based ice creams are typically naturally sweetened and give a nice creamy texture without melting too fast on the hot waffles. They also come in a variety of flavor options to complement this delicious dessert. Enjoy!
- 1 cup White Spelt Flour
- 1/4 cup Cocoa Powder
- 1/2 teaspoon Baking Powder
- 1/2 teaspoon Baking Soda
- 1/4 teaspoon Salt
- 1/8 teaspoon Cinnamon
- 6 Tablespoons Honey
- 1 cup Milk
- 1/3 cup Grape seed Oil
- 1 Large Egg
- 1 1/2 teaspoons Pure Vanilla Extract
- 1/2 cup Sugar Free Chocolate Chips or Chunks
- In a small mixing bowl, whisk together the dry ingredients. In a separate bowl, combine the wet ingredients and whisk until well combined. Add the wet to the dry, add chocolate and stir until just combined. Be sure not to over mix the batter. Cook in a preheated waffle iron. Top with your favorite ice cream and/or more chocolate!
