Cinnamon Pull Apart Rolls

Last week, my husband and I had some friends over for dinner.

They wanted to see our new puppy, of course. Enzo is just a few weeks old and it was the perfect time to get together.

I knew I was competing with a new puppy for attention that night, so I decided to make homemade dinner rolls.  I was assembling the rolls to put into the oven, when I realized there was dough that I wasn’t going to have time to finish baking before our friends arrived.

I covered the dough and placed it in the fridge to store while we enjoyed the evening. The next day, I remembered that extra dough. Instead of making more rolls, another decadent treat came to mind. Something cinnamon, sticky and very sweet.

I wasn’t thinking of cinnamon rolls this time, but sticky cinnamon pull aparts. Those sweet little rolls would be just as delicious. This recipe is a snap to make and so convenient if you discover you have left over dinner roll dough and want to convert it to a delicious dessert. These delightful rolls are immersed in melted butter then covered in cinnamon and natural powdered honey and xylitol for scrumptious little bites!

Cinnamon Pull Apart Rolls

Rolls:
2 1/2- 3 cups Spelt Flour
3 Tablespoons Powdered Honey, divided
3 Tablespoons unsalted Butter at room temperature
1 Egg, beaten at room temperature
1/2 teaspoon Sea Salt or Pink Salt
3/4 cup scalded Almond Milk
1 1/2 teaspoon Yeast in 1/4 cup Warm Water

Cinnamon Coating:
6 Tablespoon Butter, melted
1/3 cup Powdered Honey
1 Tablespoon Xylitol
2 Tablespoons Cinnamon

Measure out yeast and put into 1/4 cup of warm water. Pour 1 Tablespoon of powdered honey over it and set aside.

Scald milk by microwaving for 1 1/2 minutes. Melt butter into milk and let cool. Meanwhile, beat egg with a fork in a large bowl. Add 2 tablespoons powdered honey and salt. Pour milk and butter mixture into the large bowl. Mix together and let cool if still warm.

Add yeast to the cooled mixture. Add the cups of flour until right consistency, it shouldn’t be very sticky. Knead dough for five minutes. Cover with a towel and place in a warm area to let rise for 25-30 minutes. Pinch out 1 1/2 inch smooth balls. In a small bowl, mix combine sweeteners and the cinnamon. Dip rolls in melted butter and roll in the cinnamon and honey mixture. Place rolls in a buttered 9 by 9 baking dish. Top with any remaining melted butter and cinnamon mixture. Cover rolls and bake at 400 degrees for 18-22 minutes, or until the middle rolls are nicely baked and the tops are golden and bubbly. Let sit at least 5 minutes before cutting into them.

Serves about 12 rolls

    I’m new to your blog and probably won’t be buying powdered honey anytime soon. What can I use instead?

      Welcome to the blog! :) For this recipe, maple sugar or coconut sugar could work. Coconut sugar will make the dough a little darker in color and maple sugar may give a slight mapley flavor but both will probably taste delicious!

    I like your suggestion of spelt flour here- Sounds like it would balance out the sticky-sweetness quite nicely. :)
