How would you all like to welcome the day with this delightful green drink? There’s no better way to start your morning than with a refreshing combination of cucumber and orange – slushie style!
I’ve been introduced to the world of gardening this summer. My sweet neighbor has an inspiring garden with all sorts of produce, ranging from tomatoes to squashes. She told me she wouldn’t be using all of her soil this summer, so offered me some of her planting space! Her garden borders my yard, so the whole setup was just too convenient for me. Of course, I gratefully accepted and brainstormed what I wanted to plant. I decided on tomatoes, cucumbers and bell peppers.
That same week, my sister and cute little nieces were visiting and helped me get started. Kids make it a lot more fun… More wet and muddy, but they are so excited to help be apart of the job. It is incredible how nature then takes over and with just a little watering, weeding, time and sunshine, we have actual food!
Several weeks after, I had produce! A beautiful cucumber! The moment I cut into that cucumber, I knew I was in for a real treat. It was the juiciest, most refreshing scented cucumber I had ever seen.

Cucumber Green Drink (vegan and gluten-free)

1 cup Spinach or Mixed Greens
1 1/2 inch slice of Large Cucumber
1/2 Small Frozen Banana
Juice of 3 Oranges
1 teaspoon Vanilla Extract
1/2 cup Ice
Add all the ingredients to your blender from the order your blender suggests (liquids to frozen or frozen to liquids). Blend until smooth and icy. Enjoy right away!
