It’s been a busy week at our house. When things get crazy, it’s still important to eat healthy. That’s when we need EASY recipes that are healthy and convenient.
At our house, we like to have filling snacks already made for weeks that you know will be extra busy. Granola is a big favorite. Granola is always a healthier choice when looking at cereals, ice cream toppings, yogurt parfaits or even when you get the munchies! This recipe is easy to make and can be easily adapted. It also makes a big batch to help make this crunchy treat last for days!
1 cup Slivered Almonds
1 cup Walnuts
1 cup Pecans
1 cup Unsweetened Coconut Shreds
3/4 cup Honey
2 Tablespoons Cinnamon
1 teaspoon Pink Salt
3/4 cup Coconut Oil
Mix all ingredients together and spread out in a large baking dish or jelly roll pan lined with parchment paper. Bake at 200 degrees, for 1 hour, stirring every 20 minutes. For a more clumpy, crunchy granola, drizzle an extra 1/4 cup of oil over granola and bake for another 20 minutes. Enjoy as a cereal, with fruit and yogurt or sprinkled over your favorite ice cream.

I loved this granola! Very yummy. One problem it cemented itself to the pan. Any tips on helping it not stick so bad?

Glad you like it! Oh bummer! That’s too bad that happened even after stirring it occasionally… Parchment paper would be the best thing to use because it works great on any kind of baking dish or jelly roll pan. We will add that into the recipe. THanks!
