Kale Salad

Like most people, kale is not the first green we turn to when making raw salads. Kale is a lovely green and all, but straight out of the bag, it can be super rough and quite bitter. It is however, one of the most nutritious greens out there! Making a salad out of this veggie will give you healthy doses of vitamin A, C, K, D and calcium. Eating kale will give you more iron than eating beef! Further more, kale’s high nutritional value helps strengthen your immune system, helps fight off diseases and detoxifies your body!

When prepared in the right way, kale can also give you a fresh, fruity salad that is actually delicious! Seriously! The dressing that accompanies this contains lemon juice. Once we make the dressing, we massage the dressing into the leave – allowing the acidity in the lemon juice to break down those stubborn kale leaves, making them softer, sweeter and actually palatable! Give kale a chance this season and enjoy this healthy summer salad!

Easy Kale Salad  (gluten-free and vegan option)

3 cups Fresh Kale
1/2 cup Sliced Strawberries
3 Tablespoons Raw Honey or Agave
3 Tablespoons Olive Oil
3 Tablespoons Fresh Lemon Juice
2 Tablespoons Crushed Almonds

In a small bowl, combine the raw honey or agave, oil and lemon juice. Whisk to combine well. Pour the dressing over the kale leaves and massage the dressing into the leaves. Do this for at least 2 minutes or until you feel the kale soften. Pour the salad in a serving bowl and mix with the strawberries. Sprinkle crushed almonds over the salad and serve.
