Naturally Sweet French Silk Pie
3/4 cup Soy-Free Earth Balance Butter or Organic Butter, softened
1 1/4 cup Coconut Sugar
5 Tablespoons Cocoa Powder
1 1/2 teaspoons Pure Vanilla Extract
1/2 teaspoon Pink Sea Salt
3 Large Organic Fresh Eggs
3 drops Fresh Lemon Juice
1 organic pre-made Pie Crust or Homemade Pie Crust
- Bake your pie crust according to recipe or package directions and allow to cool.
- In a bowl of an electric mixer, combine the butter and coconut sugar together until well blended. Mix in cocoa, vanilla and salt. Add the eggs to the mixture, one at a time, beating well with each egg, about 5 minutes. Add the lemon juice with the last egg and beat well.
- Pour into the baked pie shell and freeze for 2 hours, or until you are ready to serve it. Serve with vegan whipped cream or natural whipped cream and chocolate shavings. Store pie in the freezer for up to 3 days.
The lemon juice is added to the chocolate mousse due to the raw eggs. You can’t taste the lemon juice, but the lemon juices acidity neutralizes the eggs making it safer to consume. Please use caution for the pregnant, ill or elderly. Please do not omit!
I stumbled upon an organic, naturally sweetened pre-made crust that I was interested in trying out and used it for this recipe. Half this recipe for a naturally sweet crust and this pie is absolutely delicious! Enjoy!
