We have been busy working around the clock on our cookbook! It’s so incredibly rewarding writing and rewriting recipes and our heads are spinning with excitement. But those deadlines are real. Recipe testing and eating and retesting is great and all, but our time is dwindling and things need to get done!
Here’s a fun fact for you: Annie was trying her hardest to do the Whole30 challenge while working on new and tasty recipes for The Everything Naturally Sugar-Free Cookbook. For the record, it is impossible to go very long without natural sweeteners when you trying to test recipes. She lasted 16 days before making “adjustments”. This banana bread was a creation of a bent rule, without totally breaking her cleanse. Dairy, soy, grain and sugar-free (no natural sweeteners!) makes this banana bread pretty much the coolest thing since sliced bread. Har Har.
So when you are acting crazy and decide to do a super cleansing diet like the Whole30 cleanse, this bread is the prefect treat to transition back into the baking world. You won’t believe how delicious it tastes after a cleanse, but it is so moist and flavorful, it is delicious anytime! Enjoy!
Gluten, Grain, Dairy and Sugar-Free Banana Bread (Healthy Paleo Bread!)

3 Ripe Bananas, mashed and at room temperature
1/3 cup Coconut Milk
3 Large Eggs, at room temperature
1 1/2 teaspoons Almond Extract
3 Tablespoons Coconut Oil, softened
1/2 teaspoon Pink Sea Salt
3/4 teaspoon Baking Soda
1 teaspoon Baking Powder
1/2 cups Quinoa Flour or Almond Flour
1 1/2 cup Almond Flour
Preheat oven to 350 degrees. Add all the ingredients to a blender and blend until totally smooth. Pour into a greased loaf pan and bake for 50-55 minutes or until a toothpick inserted comes out clean. Enjoy warm or cool.
- NOTE: Make sure all your ingredients are at room temperature so your coconut oil will not freeze when mixing the batter,
- If you are not eating so strictly, you can add an 1/2 teaspoon vanilla extract and a few drops of stevia. If you are really not eating strictly, you might enjoy this chocolate chip banana bread that is sweeter and still easy with just 6 ingredients!

MMM…I’m going to have to try this recipe when I’m off Whole30. It sounds really tasty! 16 days on Whole30 while writing your cookbook is impressive!

Yes Kelli, I hope you do! It’s a great “dessert” when coming off the Whole30! And 16 days isn’t too bad right? That’s one reason why I want to try it again, I really want to do 30 whole days.

I cheated slightly and added some rice flour because I was low on nuts flour. I also added vanilla extract. It might be the best banana bread, really!

HOW is this the first I heard that you ladies are writing a cookbook?!!!?!?! Oh my gosh, I feel so far behind! This is way too exciting, and I’m just so thrilled! Everyone on the planet needs a naturally sweetened cookbook!
