When spring presents such beautiful weather, you can’t help but make excuses to be outside. Even a monotonous task such as weeding can be quite enjoyable with that light breeze and warm sunshine. Warmer months get us back into nature.
Some days we can’t spend the afternoon in the sunshine. But there is just as much healing and bliss by bringing nature to you. Raw and organic. Fresh greens and luscious ripe produce bring the healing, calming properties of whole foods to both your palette and your body! Doesn’t the sight of this fresh salad just make you happy? It gets better knowing it’s sweet and delicious!
Green Blood Orange Salad (vegan, raw & gluten free)

3 cups Fresh Mixed Dark Greens
2 small Blood Oranges
1/4 cup Walnuts
6 Medjool Dates, pitted and quartered
1/4 cup Slivered Celery Slices
Olive Oil
Fresh Lemon Juice
Salt and Pepper
Wash and dry the greens. Cut the ends of the oranges off, and gently cut away the rind. Slice the oranges in about 1/4 inch thick slices to create little small circles. Cut up the celery and dates. Place a pile of greens on a plate, top with all the ingredients. Drizzle olive oil, a little bit of lemon juice over the top and finish with salt and pepper.
