Healthy Fudge Truffles

If seeing these richly dense truffles doesn’t get your attention, what if I said that they are
sugar free, gluten free and vegan?

I got a surge of excitement when I was skimming through recipes this last month and saw that I could use coconut milk in place of cream in many recipes. The ideas with coconut milk are almost as versatile as heavy cream. I will admit, I am not brave enough to try whipping coconut milk in place of whipped cream quite yet. But I was excited by the idea of using it for a rich chocolate fudge.

To be honest, this fudge was meant to be traditional fudge sliced into squares. It happened to be slightly too sticky for that. But rolled into balls, and covered in delicious toppings made them a wonderful new treat! Especially when rolled in your favorite natural toppings. The taste of these fudge truffle are rich, chocolatey and completely guilt-free. The coconut milk creates an extra creamy texture. And using rich cocoa and bakers chocolate, this fudge has an excellently deep chocolate flavor.

 

Healthy Fudge Truffles  (vegan and gluten free)

1/3 cup unsweetened Cocoa
1/3 cup unsweetened Baking Chocolate, roughly chopped
3 1/3 cup Coconut Sugar
1/2 cup Coconut Milk
2 Tablespoons Coconut Oil
2 teaspoons Pure Vanilla
1/4 teaspoon Pink Salt

In a medium size bowl, mix together the sweeteners, cocoa and chopped chocolate. In a medium saucepan, combine coconut milk and coconut oil. Bring to a boil over medium high heat. Stir constantly while heating and be careful to not burn the mixture. When the mixture reaches a boil, turn down the heat to low and add the already combined sweetener/chocolate mixture. Mix well until chocolate is melted and well incorporated. Remove from heat and add the salt and vanilla. In a greased parchment lined 8X8 baking dish, pour the fudge into the pan. Refrigerate until cooled and firm, about two hours. Scoop out and roll into 1 inch balls. Roll in cocoa powder, shredded coconut, chopped nuts or any other favorite topping.
