Every summer, nachos make it into our dinner rotation almost on a weekly basis. We love a fresh take on nachos and we’ve discovered them to be a quick and easy meal that everyone loves!
How are nachos quick and easy? Our nachos have little cooking required!
We like to omit heavy ingredients like piles of beef or sour cream and instead, add more fresh, raw ingredients! We love beans, tomatoes, greens and lot and lots of fresh avocados. All our favorite summer veggies are delicious piled high into a big salad right on top of our nachos. But wait, these nachos are not just straight greens and tomatoes. What really makes these nachos tempting to any carnivore is the flavorful secret “meat” filling.
This filling satisfies that meat void but keeps these nachos completely vegetarian! You can see it looks like real meat but with all the benefits of beans, rice and veggies!
These healthy nachos are filled with protein, raw produce, healthy fats and are low in cholesterol and unhealthy sugars. We think that’s exactly how summer nachos should be!
Healthy Nachos (vegan)

2 1/2 cups Organic Chips of Choice
1 Chipotle flavored Bean Burger Patty, thawed (like MorningStar Farms Chipotle Bean Veggie Burgers)
1/2 cup Black Beans
1/3 cup Diced Orange, Yellow or Red Pepper
1/4 cup Onion, finely chopped
1/2 teaspoon Garlic Powder
1/2 teaspoon Lemon Zest
1/2 teaspoon Salt and Pepper
1/2 cup Non-Dairy Cheese of choice (optional)
1 Large Tomato, diced
1 Large Avocado, diced
1 cup Fresh Dark Leafy Greens
In a small bowl, mash the black bean patty until it is chunky and look a little like meat. Add the black beans, pepper, onion, garlic, lemon, salt and pepper and mix until well combined. Set aside.
Lay out your chips on a parchment lined baking sheet. Evenly sprinkle the “meat” mixture over the chips. Sprinkle your cheese of choice on top. Broil on low in the oven for 2-3 minutes, until the nachos are warm and the cheese has melted. Remove from the oven and top with tomatoes, avocado, greens and more chopped peppers. Serve with hot sauce, vegan sour cream and/or your favorite salsa!
