Now this has been a long time coming. We would have shared this ages ago, but we wanted to ring in the new year right and nothing would do that like Nutella!
Healthy homemade Nutella that is vegan and a breeze to make is simply the best start to a healthy new year. Sounds like a dream come true?
This healthy Nutella has no dairy, white sugar or unhealthy oils. It makes for something that you can enjoy without throwing any resolutions out the window. And how to eat it! It can be chilled like pictured for an extremely luscious fudge just begging to be inhaled with a spoon or when at room temperature, it becomes the prefect spread for anything imaginable. There are endless delicious possibilities.
One of our favs is hot fresh crepes! I hope you’ll have this recipe in your pantry at all times, locked and loaded – this is your new addiction. Happy 2013!
Healthy Nutella (vegan)

2 cups Raw Hazelnuts
1 1/2 cups Sugar Free Chocolate, melted and cooled
1/3 cup Coconut Sugar
1-2 Tablespoons Grape Seed Oil or Coconut Oil
2 teaspoons Pure Vanilla Extract
3/4 teaspoon Pink Salt
Spread hazelnuts in a large baking sheet lined with parchment paper. Roast the nuts at 400 degrees for 10-12 minutes, or until nuts have browned and you can rub nut skins off. Remove pan and cover with a towel. Rub the nuts roughly until skins come off. It’s okay if some skins don’t come off all the way.
Dump the nuts and coconut sugar into a food processor. Blend until a smooth rough paste. Add the melted chocolate and oil. Pulse until combined. Add the rest of the ingredients and blend until smooth and creamy or to the consistency that you like. Mixture should be thick but soft. Store covered in the fridge for a thick fudge like consistency (like pictured, which is perfect for adding to hot crepes, pancakes or waffles so that when it melts it doesn’t become runny), or keep at room temperature to add to everything!

Hi Sally, You could switch it, but it won’t thicken quite like coconut sugar does and it won’t have the same flavor. The coconut sugar really adds a lovely “brown sugar” dimension to this Nutella! If you try it, we would love to know what you think of it. :) Enjoy!

This will last in the refrigerator for up to 2 weeks if stored in an airtight container. At room temperature it will last up to 5 days.

I made Nutella and it is awesome! The taste is so wonderful you could never guess they were sugar-free! The only problem is this: I made it in the morning and when I went to get some Nutella it was very crumbly. It is hard to take out of the dish ( I am storing it on the counter in an air tight glass container and lid) and I can’t really spread it on my crackers. Is there any way for me to change that?

Hi, Abigial! I’m happy you liked the Nutella. I am sorry to hear about the texture! I don’t know if the crumbliness has to do with using the flour or not. To make it more spreadable, I would either gently heat it up a little bit and/or mix a bit more coconut oil into it. It should become a lot smoother for you by doing any of those things. And maybe store it somewhere a little warmer if possible to keep the coconut oil soft. Hope that helps. Thanks!!

Also, do you think if I use Bob’s Red Mill ground hazelnut meal and toasted that the same way you instructed above that it would turn out the same? It would make it much easier!

I can’t wait to try this out. But, can I use a substitute for the coconut sugar? I do not have any and would rather not go out and get some if possible( I have healthy Graham Crackers waiting to pair up with Nutella) . But if you do not think anything else would work, I will run out and get some.

The best “healthy” sugar for this is definitely coconut sugar… If you don’t want to be healthy, you could use organic brown sugar. Maple sugar may even work but that seems to be less common than coconut sugar. I am not quite sure about the hazelnut meal. It certainly sounds a lot easier! No scrubbing off the skins. :) If you decide to try it, be careful when roasting, you’ll want to decrease the time so watch them so they do not burn. Good luck! Thanks for the comment!

Quick question: by sugar free chocolate do you mean a high quality dark chocolate? Or would the enjoy life chocolate chips work?

Either will work great! We usually use a good quality dark chocolate that is sweetened with stevia or rice syrup, but we have made this using the enjoy life chips and loved it. Hope you enjoy it!

Hi Maureen! The flour would work fine, but you really want it to be roasted for flavor. Our mom has made this recipe without roasted the nuts before so it would be “raw” and the flavor was not as robust. It’s really worth the extra step to roast real nuts to get that great Nutella flavor. But for ease, the flour would work the same as not roasting real nuts, just know it will not be as strong of a hazelnut flavor. Hope you enjoy it! :)

You can use any kind or brand of coconut oil you’d like. Just be sure it is pure coconut oil and is at room temperature. We use pink salt because of it’s high trace mineral content, but any salt you have will work just fine. Thanks!

I’ve been experimenting with faux nutella recipes too, this looks great! In the ingredients list it says “sugar free chocolate” … does that mean 100% cocoa chocolate (pure cocoa / unsweetened) or “sugar free” as in sweetened by something other than processed sugar, like Hershey’s sugar free chocolate chips. We mean chocolate sweetened with a sweetener other than processes sugar or corn syrup. You can use Hershey’s sugar free chocolate- it’s typically inexpensive and easy to find. There are also some great brands like dairy free chocolate dream bars or chocolate chips. Check out natural food stores for lots of different chocolates that are sweetened with stevia, maple syrup, brown rice syrup or organic cane juice. Thanks!
