With summer here, it’s time to simplify. We hope things like leisure and family and afternoon naps are a big part of your summer days. We hope you’re enjoying good food with minimal amounts of time in the kitchen, and instead, basking in your summer gardens, playing on the playgrounds and sitting near some form of water.
Peaches are among the most delicious, simple summertime treats. They really shine in easy healthy cobblers! This cobbler recipe is full of wholesome, completely vegan foods with minimal added sweeteners. To make this dessert easy as possible, we used naturally sweet canned peaches sweetened with grape juice in a jar (found at Trader Joe’s). This omits the need of peeling and chopping as well as decreasing the bake time.
Of course, fresh handpicked peaches could also be lovely if you’ve got the extra time. Individual ramekins make serving and eating a breeze where ever you are. Let’s make this cobbler minimal so we can get back to summer.
Although simple, this sugar-free cobbler’s flavor is above and beyond with the most delectable cashew butter based crumble topping. It’s both creamy and crunchy. We mentioned we loved cashew butter and the taste and texture of this peach crumble is why! Hints of cinnamon and cashew combine flawlessly with juicy peaches! These uncomplicated ingredients create such divine flavor fit for late summer nights and possibly large scoops of vanilla ice cream. This is what summer is all about.
Healthy Easy Peach Cobblers
Peach Filling:
1 ½ Peaches in Jar from Trader Joe’s, roughly chopped
1/4 teaspoon Cinnamon
1/2 teaspoon Pure Vanilla Extract
1.5 Tablespoons Coconut Flour
Crumble Topping:
2 Tablespoons Cashew Butter
2 Tablespoons Xylitol, plus more sprinkling if desired.
1/8 teaspoon Cinnamon
Dash of Pink Sea Salt
2 Tablespoons Oats
2 Tablespoons Almond Meal
- In a small mixing bowl, mix together the peach filling ingredients. In another small bowl, combine the crumble topping ingredients. Pour peach filling into small ramekins. Top the filling with the crisp cobbler topping.
- Bake at 350 degrees for 8-10 minutes, or until peaches are hot and topping is crisp. Turn on broiler for a couple additional minutes if a crispier crumble is desired.
