Healthy Sugar-Free Sugar Cookies
What’s going on in your life right now that would deserve a sugar cookie? What about a healthy, honey-sweetened sugar cookie? Don’t think too hard on it. These cookies are meant for treating yourself!

Healthy Honey Sweetened Sugar Cookies

It’s been a pretty chilly, blustery winter but the light is at the end of the tunnel. Have you noticed the days are a little longer? It’s not pitch black by 5pm? Daylight Savings is around the corner and Easter will be here before we know it. We’re getting through this winter! We’d like to add a bit of flare to our “getting through” with skinny sugar cookies. Make them heart shaped for Valentines or cute snowflakes for a wintery, culinary getaway!

Naturally Sweet Sugar Cookies

Can we just say how excited we are that these cookies are really only sweetened with honey?! Raw honey creates cookies that are soft, chewy and perfectly sweet – just as a sugar cookie should be! To really make these sugar cookies “skinny”, there’s only 3 tablespoons of butter in the entire recipe and stevia extract is added to keep the sugar content down. Sprinkling them with xylitol allows you to omit the frosting without sacrificing any sweetness. We highly suggest eating one or two, warm, straight from the cookie sheet. Give yourself some love!

Healthy Sugar Cookies

Healthy Sugar Cookies

Cook time: 8 mins
Total time: 28 mins
Makes: 25-30 cookies

3 Tablespoons Butter (Earth Balance or Regular)
1/3 cup Raw Honey
1 Large Organic Egg, room temperature
1 teaspoon Vanilla Extract
1 teaspoon Stevia Extract
2 Tablespoons Cornstarch
1 teaspoon Baking Powder
1/4 teaspoon Sea Salt
1 1/2 cups Oat or Spelt Flour, plus more rolling and cutting shapes
3 Tablespoons Xylitol or Erythritol, for sprinkling

Instructions:

In the bowl of an electric mixer, beat the butter and honey together until it becomes blended into a golden caramel color. Add the egg and beat until combined. You will probably need to scrape the bowl once or twice to fully incorporate. Mix in the extracts. Add the cornstarch, baking powder and salt.

Add the flour and mix until the dough becomes smooth and pliable, being careful to not over mix. The dough should be soft and moist, but if it is overly sticky, add an extra tablespoon or two of flour. Cover the dough and chill in the fridge for 10 minutes. Preheat the oven to 350 degrees. On a well-floured clean work surface, roll out the dough about 1/4 inch thick. Cut into desired shapes. Place on a parchment lined baking sheet.

Bake at 350 degrees for 7-10 minutes. Watch the cookies at 6-7 minutes to ensure cookies do not burn, especially small cookies or irregular shapes. You can bake cookies the full 10 minutes for crispier sugar cookies.

Once out of the oven, immediately sprinkle cookies with the xylitol or erythritol and place back in the oven for about 15 seconds to ensure xylitol sticks. Enjoy! Store cookies in an airtight container. The honey in these cookies keeps them moist for days!

    I am hoping to make these cookies today, and have a GF flour on hand. But it does not have Xanthan Gum mixed in. Do I not need any for these cookies?

      Heather, does your GF flour have guar gum in it? If so, it will not need xanthum gum. If it doesn’t have a binding agent like either of those gums, I would recommend adding it in just to ensure these cookies hold together nicely and come out deliciously chewy! Hope you enjoy these!

        Thank you! I used Bob’s Red Mill 1-to-1 gluten free baking flour and powdered Stevia (as I wasn’t sure if should buy liquid or powder), plus I substituted avocado oil for the butter, and these turned out great!
