Healthy Vanilla Wafers

Sometimes in a chocolate-obsessed kitchen, we need a break from the ultra rich. You know what’s just as satisfying as dark chocolate? Vanilla. These vanilla saturated cookies are so sweet and fragrant they rival any chocolate competition. Vanilla wafers are the perfect bite-sized cookie for snacking, desserting and traveling!

You can buy similar cookies at the store, but homemade is so much better! This homemade version is softer than traditional wafers and have a lovely strong vanilla flavor. And of course, these homemade vanilla wafers are healthy! Naturally sweetened and full of whole foods. If you haven’t had these childhood cookies in a while, these are the cookies to bring it all back!

Homemade Nilla Vanilla Wafers

 

Healthy Vanilla Wafers (dairy & egg free & vegan option)

1/4 cup Unsweetened Applesauce
2 Tablespoons Pure Vanilla Extract
1/4 cup Neutral Oil
1/2 teaspoon Sea Salt
1/3 cup Powdered Honey or Coconut Sugar
3 Tablespoons Xylitol
1/2 teaspoon Baking Powder
1/4 teaspoon Baking Soda
1 cup plus 1 Tablespoon Spelt Flour, plus more for rolling if needed.

Pre-heat oven to  325 degrees. In a mixing bowl, combine the first 3 ingredients. Add the everything into the mix except the flour and mix well. Mix in the flour until the batter is smooth. Scoop out a scant tablespoon of dough, roll into a smooth ball (with lightly floured hands if needed), flatten and place on the baking sheet.

Bake for about 12 minutes for softer cookies or 15-16 minutes for more crisp wafers. The cookies will firm more as they cool; please do not over bake more than 16 minutes. When the cookies are still warm, gently press down the cookies again to lightly flatten if needed. Store any leftover cookies in an airtight container.

    I don’t know your recipe, but I think they would probably hold up fine! I would bake them for the full 15 or 16 minutes so they are nice and crisp. Hope they turn out great for you! :)

    Would these hold up well in banana pudding? I have found some organic/healthier ingredient ones from Whole Foods that I use in my recipe; however, wasn’t sure if you thought these would be good for that as well since they are softer. They sound delish, though!
