This month, we are trying to stock up on healthy candy recipes that are easy to make, regardless of diet restrictions or busy Halloween schedules. We got a head start with these mouthwatering bites!
With still a couple weeks until Halloween, this is a recipe we’ve already enjoyed quite a few times. But they are so easy to make, not to mention healthy- there’s no excuse not to make them! A sweet dense middle and covered in chocolate makes them the prefect recipe to add to your candy stash!
Homemade Mounds Bars (raw and vegan)

3/4 cup Cashews
3/4 cup Unsweetened Shredded Coconut
2 Tablespoons Coconut Oil
2 Tablespoons Maple Syrup or Honey
1 teaspoon Pure Vanilla Extract
Pinch of Sea or Pink Salt
1/3 cup Sugar Free Dark Chocolate
Directions:
Ground up cashews in a food processor until a rough powder. Mix the cashews with all the ingredients except for the chocolate. Take a small ice cream scoop and scoop out little mounds and place on a baking sheet. Freeze the mounds in the freezer for about 30 minutes. While the mounds are freezing, melt the chocolate. Dip the mounds into the chocolate until the tops are covered. Place the pan back in the freezer to set another 5 minutes until harden. Keep chilled until ready to serve.
Makes 9-10 mounds
