Homemade Sugar-Free Peanut Butter Cups

October 24, 2011

Halloween is fast approaching.

Homemade Peanut Butter Cups

Since Halloween is one of my most favorite holidays, I like to celebrate to the full extent! I like trick or treating and dressing up and of course, the sweets!

But fun festivities always include unhealthy candy. And what is Halloween and trick or treating without candy? It wouldn’t be a holiday at all.

As the holiday gets closer, some of my favorite candy has been calling my name.  Very, very loudly. Especially creamy peanut butter cups.

I can’t resist chocolate and peanut butter.  I was going to make sure peanut butter cups happened for me this year – without high fructose corn syrup, added sugar, or hydrogenated oils.

Soft and creamy and peanut buttery.
Don’t you just love Halloween?

Chocolate Peanut Butter Cups (dairy and egg free)

1 1/4 cup Sugar Free Chocolate
1/2 cup Natural Creamy Peanut Butter
1/3 cup Honey
Dash of Salt

In a microwave or stove top, melt chocolate. In a small bowl, combine the peanut butter, honey and salt. Mix well. The peanut butter should be very soft. Line a mini muffin pan with liners and very lightly spray with cooking spray. Spoon about a 3/4 teaspoon amount of chocolate into the bottom of each muffin liner. Spread the chocolate to coat the sides and bottom of the liner. Place drops of the peanut butter mixture on top of chocolate, about 3/4 to 1 teaspoon. Fill the remaining cups with chocolate to cover all the peanut butter. Freeze for 30 minutes and enjoy!
