I’m starting to love almonds more and more. When eaten plain, they make a great grab and go snack. I love the punch of protein and energy they give me when I’m in a hurry. But with a few extra sweet ingredients, like honey and cinnamon, almonds can become a healthy dessert! Candied nuts are a favorite of mine because they are a taste of a sweet candy without going overboard on the sugar. Honey is used to sweeten while making them even healthier. Protein makes them filling without all the carbs. It’s the perfect balance! Almonds become absolutely mouth-watering with a caramelized coating. These nuts are easy to make and easy to eat – especially for a holiday crowd! No one will be able to resist!
Honey Cinnamon Almonds (gluten free)

1 cup unsalted Almonds
5 Tablespoons Honey
2 Tablespoons Coconut Oil
Dash of Salt
2 teaspoons Cinnamon
Mix everything in a small bowl. Spread the mixture out on a parchment lined baking sheet. It will be sticky and clumpy but will be the perfect texture when baked. Broil on low for 3 minutes. Stir and broil for another 2-4 minutes, until almonds are bubbly and lightly browned and the honey has caramelized. Allow to cool for at least 5 minutes before enjoying!
