No matter what your feelings towards Valentine’s Day, surely you can’t resist celebrating a little…
These are like the “McDreamy” of chocolate cookies.
They are rich and luscious… yet won’t give you any heartache with sickening amounts of sugar or fat. They are high in antioxidants and magnesium, thanks to all the dark chocolate and only use raw honey as the sweetener. Low in fat and high in nutrition, these cookies will keep you feeling your best. Your taste buds won’t even notice the health benefits through the moist, brownie like cookie and rich, silky center. All they’ll taste is intoxicating chocolate….
Now that’s a sexy cookie!
Enjoy them when they are nice and warm and absolutely dreamy… And don’t be surprised when one cookie just isn’t enough!

Cookies:
2 Large Eggs
1/2 teaspoon Salt
2 teaspoons Pure Vanilla Extract
2 Tablespoons Butter, softened
3 ounces unsweetened Chocolate, melted and cooled
3/4 cup Honey
1/2 teaspoon Baking Soda
1 teaspoon Baking Powder
2 Tablespoons Cocoa Powder
1 1/3 cups Spelt Flour
In a small bowl, combine the eggs, salt and vanilla. Mix until well combined. Add the butter, melted chocolate and honey. Beat until incorporated. Add the rest of the ingredients and beat until just combined. Spoon tablespoon sized balls on a lined baking sheet and bake at 350 for 7-8 minutes. When the cookie are finished baking, gently indent the very centers of the cookie by pressing with a spoon and pour about 1/2 to 1 teaspoon amount of the following chocolate glaze in the center:
Chocolate Glaze:
1 1/2 ounces unsweetened Chocolate, melted
4 Tablespoons Honey
2 1/2 teaspoons Pure Vanilla Extract
6-8 drops Liquid Stevia, if you like a more sweet chocolate than dark chocolate
Melt the chocolate in a heat safe bowl over a double broiler or in the microwave. Once the chocolate is just melted, add the honey to the warm chocolate. Mix until well combine and glossy. Add the vanilla and stevia and mix to combine. The glaze should be very smooth and glossy. When the cookies are done baking, indent the very middle part of the cookie. Pour the chocolate glaze in the center of each cookie. Once the cookies are filled with chocolate, allow to sit for at least 5 minutes to set.
Note: Be sure to indent the center of the cookies soon after they are finished baking, when they are still hot.
Although absolutely delicious, the cookies will melt and fold into themselves if you eat immediately which causes for a more messy treat!
Makes between 24-26 cookies
