I will admit that I am not a big breakfast eater. I have a tendency to graze on fruits and veggies in the morning or do a light smoothie, but I rarely turn to cereals or hearty ingredients. This stemmed from unhealthy habits in my past. After years of eating cereal for breakfast, I would feel sick and fatigued. I finally realized it was what I was eating that didn’t make me feel well. I learned that sugary cereals and cows milk made me feel sluggish and lethargic.
It wasn’t until recently that I have discovered other alternatives to cereal and cows milk! I discovered homemade cereals like delicious granola. Then I coupled that sweet granola with rice or almond milk. I quickly discovered that was a cereal I could enjoy in the mornings! The combination was so incredibly tasty and I felt great afterwards! It was hearty and filling, but didn’t make me feel sluggish. Now, granola is a common cereal to have in the house to help me feel full, energetic and happy. It’s simple make, too! Maple Cinnamon Cereal Granola (vegan)

3 cups Oats
1 cup Slivered Almonds
1 cup Chopped Pecans
1 cup shredded, unsweetened Coconut
1 Tablespoon Ground Flaxseeds
1 teaspoon Cinnamon
2/3 cup Maple Syrup
1/4 cup Coconut Oil
1 teaspoon Pink Salt
1 teaspoon Pure Vanilla Extract
Note: This recipe makes a lot of granola, so if you don’t eat granola on a daily basis or you live with a small number of people, feel free to half it!
Preheat oven to 250 degrees. Prepare a parchment lined baking sheet. Melt your coconut oil if not already liquid. In a large bowl, combine your oats, nuts, coconut, and flax. Mix well. Add the maple syrup, coconut oil, salt and vanilla. Mix until everything is evenly coated and combined.
Pour the mixture onto the prepared baking sheet. Spread the mixture out evenly.
Cook for 1 hour and 20 minutes, stir every 20 minutes to evenly bake granola. Remove from oven and let cool about 5 minutes. Enjoy with your favorite milk!
