When I fell upon this recipe the other day, I knew just what was going to make the recipe so delicious. Coconut sugar! Seeing cinnamon and butter sure got my attention and being so in love with coconut sugar right now, I couldn’t wait to try it out. When I proceeded to read that people were comparing them to mini donut holes, it was a done deal.
I have been in L.A. visiting Holly for the last few days and I was lucky enough to get to make these little donut muffins with my favorite little nieces. Baking is so much fun with little mini helpers in the kitchen, and these sweet treats are the perfect project. Aside from eating them!
I know you’re going to adore the pop-able size of these muffins and the amazing coconut sugar coating on top!
For best results: make or share with your favorite little ones.
Mini Donut Hole Muffins
Muffins:
1/2 cup Powdered Honey
1/4 cup Butter
1/2 teaspoon Ground Nutmeg
1/4 teaspoon Cinnamon
1/2 cup Low Fat Milk or Almond milk
1/4 teaspoon Pure Vanilla Extract
1 teaspoon Baking Powder
1 cup White Wheat Flour or Spelt Flour
Topping:
1/3 cup unsalted Butter, melted
1/4 cup Coconut Sugar
1 Tablespoon Xylitol
1 teaspoon Cinnamon
In a mixing bowl, combine all the muffin ingredients. Notice no raw egg in the batter? You may want a taste or two… Then bake in mini muffin tins at 350 for 16-18 minutes.
While those donuts are baking, melt the 1/3 cup of butter.
Combine coconut sugar, xylitol and cinnamon. When muffins are out of oven, pour melted butter on top of muffins and sprinkle with the cinnamon sweetener mixture. Enjoy!
