We couldn’t believe such healthy ingredients could yield delicious cookies!
They are moist, natural and sweet. You’ll find they have the perfect amount of carrot flavor. There are no eggs in the dough, so you can fearlessly enjoy the dough. Mom’s Carrot Cookies (vegan)
Yields 35 cookies
1 cup Spelt Flour or White Wheat Flour
1 teaspoon Baking Powder
1/2 teaspoon Pink Salt
1 cup Rolled Oats
2/3 cup Walnuts
1/2 cup shredded Coconut
1 cup shredded Carrots
1/2 cup Honey or Agave
1/4 cup Coconut Oil
1/4 cup Butter or Earth Balance Butter
1 teaspoon Ginger
1 teaspoon Cinnamon
1/4 teaspoon Liquid Stevia
1 teaspoon Pure Vanilla Extract
Mix all ingredients in a large mixing bowl and bake at 350 degrees for 10-12 minutes. Or enjoy the tasty raw dough!
