Naturally Sweet Almond Joys

October 31, 2011

Naturally Sweet Almond Joys. Yes, naturally sweet! Yes, healthy! And yes, these things taste superb!

I honestly thought about handing these out for Halloween. They taste EXACTLY like regular Almond Joys. But I didn’t think any kid would want to be given a homemade treat. I remember coming back from trick-or-treating and having my mom inspect every piece of candy to make sure nothing was tampered with. I remember eating a skittle from a bag that was slightly opened and thinking, “here goes!” not really believing that it could be poisoned. Kids these days are even smarter and more cautious and really, they just want their favorite packaged candy. So I decided against handing these out and instead, enjoyed them all to myself. My inner child is now more than happy with these candies. Healthy almond joys will make my Halloween extra special.

These might scare you at how easy, delicious and addicting they are. They are so good and made with just whole ingredients. If you can’t stop after the 5th one… don’t be afraid. Swim suit season is a long way off. And besides, it’s Halloween!

Naturally Sweet Almond Joys (dairy free and soy free)

1 cup shredded unsweetened Coconut
3/4 cup Honey
2 Egg Whites
1/2 cup Almonds
1 1/4 cup Sugar free Chocolate, melted

Mix coconut and honey together in a mixing bowl. In a separate bowl, beat the egg whites until light and fluffy. Mix eggs in with the coconut and honey mixture. In a mini or regular muffin tin, place 1 almond in each cup. Add a bit of batter over the almond to completely cover. Bake at 350 for 18-20 minutes. Once out of the oven, freeze the almond joys until cool (at least 15 minutes). Coat the joys with your melted chocolate and then they are ready to devour! Makes 12-15
