I love the kind of Saturday mornings with not a single thing planned for the day.
The Saturdays that can be spontaneous, whimsical and free.
Too often, the weekends can have a running errands, “get things done ” agenda. It can be great to have those super productive weekends, when everything on your to-do list actually gets done. But sometimes you need a Saturday morning that consists of waking late, sipping your favorite morning drink and taking time to enjoy (or perhaps, eat) a delicious breakfast.
French toast makes an excellent dish for that sort of morning.
French toast instantly becomes a favorite recipe for it’s simplicity and ease. Even for those hurried mornings where you simply can’t stop and daydream. There’s no doubt this dish can be made with elaborate toppings and drool worthy flavors to create a real special treat. But with just a few simple ingredients and a few minutes at the stove, a delectable meal is not far distant. With no sugar, no dairy (unless you count eggs) and real healthy bread, this stack of sweet goodness is a completely guilt free “dessert breakfast”. I think a breakfast like that is a strong invitation to pause and dream.
Naturally Sweet French Toast

1/4 cup Almond Milk
1 Large Egg
1/2 teaspoon Cinnamon
1/2 teaspoon Vanilla
1 Tablespoon Flour
1/2 Tablespoon Sorghum or Black strap Molasses
Dash of Pink Salt
7 slices Spelt Bread or Whole Wheat Bread
1 Tablespoon Coconut Oil
In a shallow bowl or dish, combine the almond milk and egg. Add the cinnamon, vanilla, and flour. Whisk together. Add the molasses and salt and whisk until well incorporated. It will take a minute to really incorporate the molasses, it will be a bit stringy. In a medium size pan, heat up coconut oil over medium heat. Immerse a slice of bread in the mixture. Cook slice on medium heat on both side until bread is golden brown and firm. Repeat with the other slices of bread.
Serve warm with real maple syrup, whipped cream and/or fresh sliced fruit.
