When I first made these cookies, it may have been on such a morning where I was craving sweets but didn’t want to be too naughty in breaking any sugar rules before noon. So when I offered my husband a carrot cookie that morning, he asked me if they were really healthy enough for breakfast. I was very happy to give him a resounding “yes”!
Everyone likes the idea of eating cookies around the clock, don’t they? These are ones everyone can feel good about eating anytime! They are filled with nutritious ingredients that won’t weigh you down. These carrot cookies are no-bake, (not even requiring cooking on the stove-top or any of that crazy business!) which means you get the full raw benefits of carrots, nuts and coconut in this sweet healthy treat! I would say, eating cookies anytime is a sure sign of living life right.
No-Bake Carrot Cookies (vegan and gluten-free)
Print Recipe
2 Tablespoons Coconut Oil, softened
1/4 cup Applesauce, at room temperature so it doesn’t seize the oil
2 Tablespoons Ground Flax
1/3 cup Coconut Sugar
1/3 cup shredded Coconut
1 teaspoon Pure Vanilla Extract
2 teaspoon Cinnamon
1/4 cup Chopped Walnuts
1/2 cup Grated Carrots
1 cup Oats (we used gluten-free)
Mix everything in a bowl, roll into balls and chill in fridge for 15 minutes. Then enjoy! Store covered in the refrigerator for up to 3 days.
Yields 12-15 cookies

Yes. To make them into small balls, about a tablespoon and half of dough, will yield 16-18 cookies. Each cookie will be about 70 calories, 3.5 grams of fat, 0 grams of cholesterol, 1.3 grams of fiber and 1.5 grams of protein. Hope you have a great time at the BBQ!

We have not tried these cookies with anything other than oats but quinoa flakes or rice flakes could work.
