
No, I really love raw dessert recipes because of the ease and convenience in making them – almost instant satisfaction! I love no-bake treats because I can whip them up in minutes and enjoy them immediately. So many raw treats are outstandingly delicious and incredibly easy. The amazing health benefits are an added bonus!
Mint is a pretty enchanting flavor and always make a statement around St. Patrick’s day. I needed to let this flavor shine. Blended in a creamy, chocolate center, the two flavors are perfection! This tart has such a lovely refreshing flavor and combined with the silkiest fudge filling ever, I’m going to come out and say it. You really shouldn’t leave this March behind without trying it!
No-Bake Mint Chocolate Tart (gluten free & vegan)
Chocolate Crust:
2 1/2 cups Walnuts
1/4 cup Coconut Shreds
1/4 cup Maple Syrup
1/3 cup plus 1 teaspoon Cocoa
2 1/2 Tablespoons Flax Seeds
1 teaspoon Vanilla Extract
Dash of Stevia
In a food processor, combine the walnuts and coconut shreds together until they are rough crumbs. Add the maple syrup and pulse to combine. Add all the rest of the ingredients. Press into a large 9-inch tart pan. Fill with the following recipe:
Chocolate Fudge Filling:
2 Large Ripe Avocado
1/2 cup Coconut Shreds
2/3 cup plus 2 Tablespoons Cocoa
1/2 cup Maple Syrup
3 Tablespoon Coconut Oil or Grape seed Oil
1/4 teaspoon Xanthan Gum
1 Tablespoon Peppermint Extract
Dash of Stevia
In a food processor, blend up coconut shreds to create a smooth coconut butter. Scrape inside of the bowl periodically, and keep mixing until it becomes smooth. Add avocado and mix until smooth and creamy. The mixture should look like green frosting. Add the rest of the ingredients and add stevia to desired sweetness. Spread out onto the chocolate crust. Enjoy immediately or chill for 1 hour for a more firm and (tastier) tart.
