No-bake fudge brownies speckled with chocolate chips and freeze dried raspberries create the ultimate chocolate treat!
I commend all of you doing New Year’s resolutions. January may have been the longest month of your life, being focused on healthy eating and all! You may have spent as little attention as possible on things like chocolate. I have friends and family who are still committed to improving their health so, I’m going to meet you halfway with a guilt-free treat. Delight yourself and your Valentine with healthy brownie bites!
These brownies were inspired by those pre-packaged ultra fudgey brownies you can buy. Even Whole Foods has brownie bites in their bakery that are hard to resist knowing they are fresher and healthier than Little Debbie’s! However, with our healthy eating goals still in mind, we can do better. These No-Bake Chocolate Raspberry Brownie Bites taste like a delicious brownie batter treat speckled with chocolate chips and raspberries. Take heart that this fudgey chocolate and raspberry goodness is all naturally sweetened.
I love that this recipe is easy to assemble for when a fudge brownie craving hits. The raspberries just intensify the deliciousness! These are loaded with wholesome ingredients that (I hope) you’ll feel good about splurging on come V-Day. Have a beautiful February!
No-Bake Chocolate Raspberry Brownie Bites
1/4 cup Cashew Butter
1 Tablespoon Earth Balance Butter, Coconut Oil or Regular Butter
1 Tablespoon Natural Raspberry Jam
1/3 cup Coconut Sugar or granulated sweetener of choice
2 teaspoons Vanilla Extract
1/4 cup Unsweetened Vanilla Almond Milk
1/4 cup Dark Cocoa Powder (like this. PLEASE use a dark powder or these won’t taste truly brownie like!)
1/2 cup + 3 Tablespoons Spelt or Oat Flour, plus more for rolling & cutting
2 generous Tablespoons Chocolate Chips (mini chocolate chips are recommended)
2 generous Tablespoons Freeze Dried Raspberries
Directions: In a mixing bowl, combine the cashew butter, butter, jam, sweetener, vanilla and almond milk. Mix until well combined. Sift in the cocoa powder and flour together. Add the chocolate chips and raspberries. Place the dough in the freezer for 15 minutes.
On a clean work surface, lightly dust with flour and roll or pat out the dough into a 1/4 inch thick disk. Use cookie cutters to cut into heart shapes and place on a parchment lined dish. If you would like to forgo the rolling/cutting, roll into balls. Place back in the freezer for 15 minutes to set. Store brownie bites in an airtight container in the fridge. Enjoy!

I couldn’t wait to try these when I saw them. I omitted the oil because I was out and they stilled turned out. A little more dry than yours probably. I love the flavor! Prefect brownie treat!!!!
