We’ve all had those mornings that somehow escape underneath us. We’re doing laundry, wiping baby mouths, running errands, walking dogs and checking emails, when suddenly it’s 11 am and we realized we haven’t eaten a single thing.
When I was in college, I was extra guilty of this. At most, I got in the habit of grabbing a handful of carrots as I ran out the door and would plan on eating when I got back from classes. But a handful of baby carrots isn’t enough to sustain for very long. Every busy mom, wife, college student or even just lazy person needs snacks that are filling and nutritious but just as easy to grab on our way out.
No-bake granola bars do the trick! Easy to make, easy to store and easy to eat! What I love about these is that they require absolutely no cooking. This can hardly be termed a recipe because it’s simply mixing a bunch of stuff together, mashing it in a pan and freezing. That’s it!
No-Bake Cinnamon Nut Granola Bars (vegan)
1 1/4 cup Oats
1/2 cup Puffed Kumat, Quinoa or Millet
1/4 cup Whole Wheat Flour
1/4 cup Chopped Walnuts
3 Tablespoons Natural Almond Butter
1/4 cup Ground Flax
1 teaspoon Cinnamon
1/8 teaspoon Ground Nutmeg
1 teaspoon Vanilla Extract
2 Tablespoons Applesauce
1/4 cup Raw Honey
1 teaspoon Molasses
In a mixing bowl, combine the first 4 ingredients and mix. Add everything else and mix well. Press into an 8 by 8 baking dish. Freeze for 30 minutes or until set. Cut into slices and store in an airtight container in the refrigerator until ready to use.
