We’re talking about combining cheesecake and cookie dough into one luscious dessert bar. Yes! The best part? These bars are no-bake and vegan.
I am in love with the flavor of these bars. They are rich, but not tooth-achingly sweet. The best kind of cookie dough in my book is chocolate chip. It’s a world favorite, so naturally it’s the best flavor to create when talking about cheesecake bars! The graham cracker crust adds a great depth of flavor to the cookie dough and rich cream cheese layer. The fact that all this is vegan makes me slightly obsessed!
Typical cheesecakes won’t make you feel as good as these vegan bars will! The soft decadent layers will have you completely smitten with how you feel after enjoying them. You can indulge because these bars are made with natural sugars, healthy fats and nutrient rich grains. The health factor (on top of the delicious factor) adds to their charm.
No-Bake Cookie Dough Cheesecake Bars (vegan)

Graham Cracker Crust:
1 row of Midel Sugar Free Graham Crackers (about 1 cup when in crumbs)
1/3 cup Oats
4 Tablespoons Earth Balance Butter, softened
3 Tablespoons Maple Syrup
Cheesecake Filling:
8 oz Vegan Cream Cheese of choice, at room temperature
1/2 cup Xylitol
1 teaspoon Pure Vanilla Extract
1 Tablespoon White Spelt Flour
Cookie Dough:
2 Tablespoons of Cream Cheese Filling, recipe above
4 Tablespoons Earth Balance Butter, softened
1/3 cup Coconut Sugar
1 Tablespoon Maple Syrup
1/2 teaspoon Sea Salt
1/2 teaspoon Pure Vanilla Extract
3/4 cup White Spelt Flour
Heaping 1/3 cup mini Chocolate Chips or chunks
Directions:
Line a 8 x 8 inch baking dish with parchment paper and set aside.
In a food processor or blender, combine the oats with graham crackers. Mix until crumbly. Pour into a small mixing bowl and combine 1/4 cup butter and 3 tablespoons maple syrup. Mix until moist and well combined. If it is still a little dry and is not holding together at all, add a bit more maple syrup. Wet your hands and gently press the mixture at the bottom of the prepared pan. Place in the freezer for 10 minutes.
Meanwhile, begin on the cheesecake filling. Empty the crumbs of the crust out of the food processor and add the xylitol. Process the xylitol until powdery. Add the soft cream cheese, 1 teaspoon vanilla and flour. Mix until creamy and delicious.
Remove crust from freezer and spread the cream cheese filling over the crust, reserving 2 tablespoons for the cookie dough. Return to the freezer for another 10 minutes.
Add the 2 tablespoons cream cheese filling with butter and coconut sugar and mix well to combine. Add the rest of the ingredients and mix well. Spread the cookie dough over the cream cheese filling and return the pan to the fridge to set for 30 minutes. The bars will firm up the longer they sit in the fridge so if you like softer cheesecake, you can remove from the fridge at 20 minutes or so. Cut into squares. Keep any leftovers in the fridge.

I’ve never heard of pink salt. Where would I get that & could I use regular salt instead?

You can find pink salt at any health food store or specialty food store. We use pink salt in our recipes because it is very rich in trace minerals. If you can’t get it, regular salt will work just fine. Thank you!

Hi, These look AMAZING, but I don`t have many of those ingredients. Would regular flour and sugar work? Also, can I replace the Xylitol with any other ingredients? Great idea, but I wish it used ingredients that I usually have at home!! Thank you for the recipe! :-)

Thank you! We understand it can be hard to find some of these ingredient. If you want to make these with regular sugar, it would work just fine. You can sub out white flour for the flour as well. For the xylitol, you can use regular powdered sugar and for the cookie dough, brown sugar would work great. However, for the crust, maple syrup or another liquid sweetener needs to be used so it will bind and hold up well. I hope you enjoy them! And in the future, I hope you’ll consider the natural alternatives, because even though they are a little harder to find, they are just as delicious! :) Thanks for the comment!

Jessica, there are a variety of vegan cream cheese products available. We didn’t specify a particular brand since most vegans have a favorite kind they like. If you are not vegan, regular cream cheese also works great. Thanks!

Jessica, did you miss something … it says Vegan cream cheese. There is a difference. I am sure if you Google it you will see what it is made up of. There is no dairy.
