Rather the chocolate becomes even more chocolatey with a hidden and very subtle dimension of flavor. You’ll sense that something isn’t quite the same with these cookies. They will be purely chocolatey, and yet, there will be something different… something special. You must try it to believe it!
No-Bake Mexican Chocolate Cookies (egg free & vegan option)
Print Recipe
Mix the following in a small bowl:
1 cup White Wheat Flour
1/4 cup Cocoa Powder
1 teaspoon Cream of Tartar
1/2 teaspoon Sea salt
In a separate bowl, cream together the following:
1 stick Unsalted Butter or Earth Balance Butter, room temperature
Heaping 3/4 cup Coconut Sugar
1/2 teaspoon Pure Vanilla Extract
3/4 teaspoon Cinnamon
1/4 teaspoon Chili Powder
Add the dry to the wet before adding:
1 Tablespoon Almond Milk
Roll the dough out into a large log. Cover with plastic wrap and freeze for 30-45 minutes. Cut into slices and enjoy! Keep cookies chilled in an airtight container in the fridge or freezer.
