No-Bake Peanut Butter Oat Coconut Bites

How does peanut butter do it? It always tastes so good – whether you bake it with dark chocolate, layer it with jams or mix it with oats and white chocolate. It really just fuels my peanut butter addition. Cheers to this peanut goodness with No-Bake Peanut Butter Oat Coconut Bites!

I’ve been focused on my making my workouts more effective lately and trying to be more consistent with being active. One side effect of working out is that I crave healthy foods. One downside is that I seem to get hungry more often and I need to keep myself fueled. To achieve this in an easy way, I revisited a favorite snack – the idea of no-bake energy bites. These delicious little power balls are loaded with so many sweet additions that I feel I’m indulging! It’s always a win when my “snack” or “treat” is healthier than I realize!

These peanut butter oat coconut bites are creamy, crunchy and sweet. The addition of oats and unsweetened coconut give these balls such delicious flavor and texture that you’ll find yourself sneaking them from the fridge. These are the best way to indulge! Here’s to keeping our peanut butter loving hearts happy!

 

No-Bake Peanut Butter Oat Coconut Bites

1/2 cup Natural Creamy Peanut Butter (I used Trader Joe’s no-stir)
2 Tablespoons Almond Milk
2 Tablespoons Maple Syrup
1/2 teaspoon Vanilla Stevia + 1/2 teaspoon Vanilla Extract
3/4 cup Oats
1/2 cup unsweetened Shredded Coconut
1/4 cup Chopped Peanuts
1/4 cup Cacao Nibs or Mini Dark Chocolate Chips

Directions:
In a large mixing bowl, combined the peanut butter, almond milk and maple syrup and mix until smooth and cohesive. Mix in the extracts. Add the oats, coconut shreds, chopped peanuts and chips. Use a small cookie scoop to scoop out uniform balls. Shape into balls and serve! Store leftovers in the refrigerator.

*If your peanut butter is super liquidy, decrease the almond milk by 1 tablespoons and add more oats and/or coconut shreds. Add more a little of what you like best to reach a consistency that is easy to mold into balls but not overly sticky.

*Be sure to use small chocolate chips if storing these for later so these are easy to eat when chilled. If using standard sized chips, roughly chop before adding.

Yields 16 Balls
