Happy Labor Day! With it being a holiday and all, a day of R&R is always appropriate. Also appropriate, cookie dough truffles. What better way to relax than with a fabulous raw treat that took hardly any work?

We adapted this recipe from chocolatecoveredkatie.com. She has so many raw desserts like this that we decided to try one and if you like this recipe as much as we did, check out her other flavor variations!
Oatmeal Cinnamon Cookie Dough Truffles (vegan)

1/4 cup Unsalted Cashews
1/4 cup Rolled Oats
2/3 cup pitted Madjool Dates
3/4 teaspoon Pure Vanilla Extract
Dash of Salt
3/4 teaspoon Cinnamon
If your dates have pits, remove them by opening the soft skin of the date with your fingers and pulling out the pit from the center. In a food processor (like a Cuisinart or a Magic Bullet) add the nuts and oats. Chop the nuts and oats until you get a rough sandy texture. Add the rest of the ingredients and let the food processor work it’s magic for about 1 minute. The “dough” might be a little sticky, but this is okay. Roll into balls for a cookie dough truffle or bars or squares if desired. The dough is delicious immediately, but we found it is even more so after letting it chill for 30 minutes or longer in the fridge to let the flavors blend nicely. With a cinnamon oatmeal flavor and a soft texture; these are definitely a guilt free cookie dough treat!
