Overnight Pumpkin Pie Oatmeal

Pumpkin Pie Oatmeal Pudding

We hope you’ve been surrounded by all your favorite things this Fall, especially all things pumpkin. It’s the best time of year for it. This is also the best time of year for baking… but as hectic as life gets, we didn’t find ourselves baking much this week. This feels like THE WORST when all you crave is soft pumpkin goodies. We did however come up with something else! When you’re busy or just plain lazy, this no-bake treat is for you!

Overnight oats are a brilliant way to make easy breakfasts or snacks. With the right toppings, it can be on the brink of a dessert. Who doesn’t want that? One of our favorite fall treats is pumpkin pie. We loaded up oats with pumpkin, vanilla and pumpkin pie spice and found it came pretty close in flavor. This healthy treat is filling and so creamy with just the right amount of spice. Top it with a dollop of “whipped cream” and it becomes dessert for anytime!

Pumpkin PIe Oatmeal

 

Overnight Pumpkin Pie Oatmeal for 2

Prep time: 5 mins
Total time: 5 mins

1 cup plus 2 Tablespoons Almond Milk
1/2 cup Canned Pumpkin
1 cup Oatmeal
1 teaspoon Vanilla Stevia Extract (or add additional 1/2 teaspoon Vanilla Extract to Stevia)
Dash of Sea Salt
3/4 teaspoon Pumpkin Pie Spice, plus more for dusting

In a small bowl combine:
1/3 cup Plain Greek Yogurt
2 Tablespoons Xylitol

Instructions:
In a jar or container, combine all the oatmeal ingredients and mix until smooth. Cover and place in the fridge overnight or at least 7 hours.

Remove from fridge, divide into 2 servings and top with the sweetened yogurt cream. Dust with more pumpkin pie spice and serve.
