Mmmm… peanut butter delight!
One of the best things about food blogging are the suggested recipes that we get from bloggers and readers! Recreating favorite desserts is so rewarding when we know you’ll enjoy them!
When a healthy recipe for these peanut butter delights was requested, we got right to work (since there is no time to wait when peanut butter and chocolate are involved!). Strangely, we had never tried a recipe like this. Can’t believe we hadn’t indulged in this sweet peanutty chocolatey oat goodness until now! Despite the short ingredient list and no baking required, these treats yield outstanding delicious results. Once you try them, it’s easy to see why they are a favorite!
Peanut Butter Delight (vegan and gluten-free option)

1/4 cup Butter or Coconut Oil
2 cups Coconut Sugar
1/2 cup Coconut Milk (or Almond)
1/3 cup Cocoa Powder
2 1/2 teaspoons Pure Vanilla Extract
3/4 cup Natural Peanut Butter (creamy or crunchy)
Generous 2 & 3/4 cups Oats (regular or gluten free)
In a small sauce pan, combine the oil, coconut sugar and coconut milk. Mix until the sugar has dissolved. Add the cocoa powder and bring to a low simmer on medium-low heat. Allow to boil for 4-5 minutes. Remove pan from heat and stir in the extract and peanut butter. Stir in oats and mix until the oats are completely incorporated. Pour the mixture and spread evenly in a greased 7 by 11 or 9 by 9 baking dish. Place in the refrigerator for about 25 minutes or until firm. Slice into bars and try not to eat the whole pan in one night!
Store any leftovers covered in an airtight container at room temperature.
*** For vegan bars but with a buttery taste, add 1/4 teaspoon natural butter extract with the vanilla.
