Since our family is spread out across the country, sometimes we like to make fun packages to send to each other. Our mom is the best at doing this. Ever since we moved away for college, we could expect a little something for almost every holiday – filled with new kitchen gadgets or delicious treats. Our birthdays are definitely occasions where she’d send something special.
A couple weeks ago we had a birthday in the family – Holly’s husband, Chris! These delicious peanut butter granola cups were sent to him as a birthday surprise. They were stored in these cute individual boxes, complete with a birthday greeting. The flavor and texture of these were fantastic, and Holly quickly snapped some pictures of these cups to showcase our mom’s creation.
We love these cups because they are a healthier, heartier take on peanut butter cups. More nuts makes them more filling and nutritious. Almonds and peanuts are both used in these for extra flavor and crunch! The individual cups made them perfect for travel or school lunches. Keep them cool and they are just about the perfect snack for anytime!
Peanut Butter Granola Cups (dairy-free and gluten-free)

3 1/2 oz Organic Sugar Free Chocolate, melted
1 cup Dates, pitted
1/4 cup Salted, Natural Peanut Butter (I used freshly ground)
1/4 cup Raw Honey
1 cup Roasted, Chopped Almonds
1/4 cup Shredded Coconut
1/4 cup Dry Roasted Peanuts
1 cup Oats, Gluten Free Oats will also work
1/2 teaspoon Pure Vanilla
1 cup Dates, pitted
1/4 cup Salted, Natural Peanut Butter (I used freshly ground)
1/4 cup Raw Honey
1 cup Roasted, Chopped Almonds
1/4 cup Shredded Coconut
1/4 cup Dry Roasted Peanuts
1 cup Oats, Gluten Free Oats will also work
1/2 teaspoon Pure Vanilla
Spoon 1 teaspoon of melted chocolate into mini muffin tins or small candy cup molds. Lift and roll the muffin or mold pans to coat the cups or use a mini spatula for additional help. Set the chocolate cups in the refrigerator to harden.
Next, process dates in a food processor until smooth. Add the rest of the ingredients and mix well.
Scoop out about 1-2 teaspoons sized balls to fill each chocolate cup with the nut mixture. Gently press the mixture into the cup. Place it in the freezer for at least 30 minutes.
Remove the peanut butter cups from the pan and enjoy! These cups are perfect for care packages and gifts when stored in individual storage cups.
