I was in the checkout line at the health food store when a local vendors bin caught my eye. Peanut Butter White Chocolate Protein Bars, the sign read. I am totally not an impulse buyer but that sign was screaming “You need me! I’m delicious!”. Peanut butter and white chocolate was enough to get my attention. Maybe it was just my inner sweet tooth but I promptly bought three bars right there on the spot.
I’m so glad I did. Wow! Peanut butter and white chocolate is my new favorite flavor combination. After my first bar, I instantly began plotting my own recipe for this decadent treat full of lovely white chocolate and creamy peanut butter base. I officially want to eat nothing but these bars from here on out. That should be taken as a warning for the future of this blog!
I love this recipe for a few reasons. Like many protein bars, you feel like you are eating a candy bar over something that is actually good for you. This recipe tastes like delicious cookie dough! A no-bake cookie bar just makes things too easy. These bars are refined sugar-free and protein-rich and they are completely vegan. Bonus: You can make them as gluten-full or as gluten-free as you’d like.
All that good stuff makes it hard to believe these peanut butter white chocolate chip tastes-like-cookie-dough bars are actually healthy! Whip up a batch to see for yourself. If you love soft cookie dough, white chocolate and peanut butter, you’re in for the best treat!
Peanut Butter White Chocolate Protein Bars
3/4 cup Creamy Natural Peanut Butter
1/4 cup Maple Syrup
1/4 cup Almond Milk
2 teaspoons Pure Vanilla Extract
1/4 teaspoon Liquid Stevia Extract
1/4 cup Vanilla Protein Powder
1/4 cup Oats (can use Gluten-Free)
3 Tablespoons Ground Flaxseed (or grind your own from whole flaxseed)
3 Tablespoons Barley Flour
1/8 teaspoon Cinnamon
1/3 cup Homemade White Chocolate Chunks or Chips
In a medium-sized bowl, beat together peanut butter, maple syrup and almond milk until blended and creamy. Add stevia and vanilla extract. Mix in the protein powder, oats, flax, barley flour and cinnamon.
Gently fold in the chocolate chunks. Spread out onto a parchment lined 8 x 8 baking dish. Cover and place in the fridge to set for 30 minutes. Slice into 9 bars. Enjoy right away or store in the fridge for up to 5 days.

Sorry, Kim, if you want to keep these sugar-free, you’re going to have to make your own white chocolate chunks. If you don’t care about keeping these naturally sweetened, you can use any white chocolate product you’d like. I hope that helps. The white chocolate recipe is pretty easy if you want to give it a shot. :)
