Traditional rice krispy treats merge with salted caramels in these easy, naturally-sweetened cereal bars.
Salted Caramel Rice Krispy Treats (vegan, gluten-free, soy-free)

1/2 cup Coconut Oil
1/2 cup Coconut Sugar
1/3 cup Raw Honey or Agave
2 teaspoons Pure Vanilla Extract
1/2 teaspoon Natural Butter Extract
3 1/4 cups Puffed Rice Cereal
3/4 teaspoon Coarse Sea Salt
Butter an 8 by 8 dish with coconut oil and set aside.
In a microwave bowl, heat the coconut oil, coconut sugar and honey for 30 seconds. Stir sweeteners and heat for another 30 seconds. Heat for an additional four-15 second increments, stirring between each heating. Carefully remove caramel from microwave and stir in vanilla extract and butter extract. Stir until caramel is smooth. In a mixing bowl, combine caramel with the puffed rice, reserving about 2 tablespoons of caramel sauce. Spread puffed rice mixture evenly into the buttered dish. Scrape out leftover caramel sauce and spread over bars, then immediately top with salt. Place bars in the fridge to chill for 20 minutes. Cut into bars and enjoy!
Note: I chose to use puffed brown rice which has no sweeteners added to it all, so even with the caramel, they are not overly sweet! If you use regular Rice Krispies, they will be a lot sweetener.

Funny, I posted a salted caramel rice crispy treat recipe awhile back and was JUST looking at the recipe last night because I’m craving them! I love using sea salt with sweets, especially chocolate recipes.

Great minds think alike, I guess! :) I didn’t realize how tasty caramel was with rice krispies and I agree, salt is amazing in desserts – especially with chocolate!
