Shamrock Shakes

The famous McDonald’s milkshakes that come out every St. Patrick’s Day can cause quite the excitement come late February. I don’t know of any other seasonal milkshake that gets so much hype. I’ve never been a huge fan of them, but I know some people that have to get one every. single. year. Cool mint flavoring swirled into creamy vanilla ice cream does sound pretty enticing.

We’ve heard how awful fast food is for our health and the ice cream is no exception. No one really needs another temptation to go through the drive thru. But having your own special treat that replicates that coveted shake does a pretty good job of taking away the temptation!

I decided to try a different approach to this icy treat by making it truly and completely guilt free! How about a sugar-free and vegan milkshake?!

This creamy, dreamy milkshake is created with coconut milk! I actually conquered my doubts about making my own ice cream with this kind of milk, as before, I had no idea how it would turn out. But I’ve always loved store bought coconut ice creams and loved that they were creamy, delicious and vegan! My fears have been vanished by this lovely creation of a Shamrock Shake. This coconut milkshake is just as good as store bought treats and just so completely fabulous for a minty flavored Shake. Enjoy!

 

Shamrock Shakes  (vegan & gluten free)

1 can Full Fat Coconut Milk
1/2 cup Xylitol
1/2 cup Maple Sugar or Xylitol
1/2 -3/4 teaspoon Peppermint Extract
1/2 teaspoon Vanilla Extract
1/2 teaspoon Stevia Extract
1/8 teaspoon Xanthan Gum
Optional: Natural Green Food Coloring
Optional: Fresh Mint Leaves, for garnish

Place your can of coconut milk in the freezer for about an hour to chill. Pour in a medium sized bowl. Whisk in the sweeteners, extracts and xanthan gum. Add your salt and food coloring. Pour into an ice cream maker, and let freeze according to your ice cream makers directions. Mine took about 30 minutes. Enjoy immediately after as a soft, drink style milkshake or place in the freezer for an additional hour to enjoy as a thick custard-like shake.

Makes 2 medium sized shakes
