Helping myself to four or five of these little bites feels indulgent, but isn’t cause for fret. I can eat a few, when really, I just had a normal sized muffin! It creates a nice illusion every time (kind of like my extra slimming black bathing suit) to help me feel fit and healthy. These aren’t too sweet, nor too lemony for a fresh flavor that fulfills the carb or sweet craving with even just one or two.
But here’s the best part – the ingredients in these are naturally skinny! Zero butter or refined sugar! Instead, these cute muffins use healthy oil and sugar so if you just happen to eat 6 or 7, you’re still in the clear! Happy skinny baking eating!
Skinny Mini Lemony Poppy Seed Muffins
1/2 cup Greek Yogurt
1/4 cup Coconut Oil, melted
1 Large Egg
1 Tablespoon Almond Milk
1/2 teaspoon Pure Vanilla Extract
1/2 cup Honey
Zest and Juice of 1 Lemon
1/4 teaspoon Baking Powder
1/2 teaspoon Baking Soda
1 Tablespoon Poppy Seeds
1/4 teaspoon Pink Salt
1 cup Spelt Flour
Pre-heat oven to 400 degrees. In a medium bowl, mix together the Greek yogurt, oil and egg. Stir together until well incorporated. Add the almond milk, vanilla, honey and lemon zest and juice and mix. Add the rest of the ingredients and mix until just combined. Careful to not over mix, so your muffins stay soft and fluffy.
Spoon the mixture into greased mini muffin liners and bake for 9-10 minutes. Make sure to spray your muffins liners well or else you may lose the bottoms of your muffins to the liners! You can also bake these without liners if you wish in just a greased pan. Enjoy!
