Vegan Eggnog Pudding

Christmas is right around the corner. You might be busy making pies and finishing up last-minute gift wrapping. You are hopefully rocking out to Nashville Christmas by now. You may already have your holiday menu all planned out. So where does this vegan pudding fit in among the festivities? This eggnog pudding is so fantastically delicious and festive that even though it is filled with healthy chia seeds, it would fit in flawlessly on your Christmas breakfast table.

Healthy Eggnog Pudding

Christmas is one holiday that tends to allow an incredible amount of unhealthy foods and overeating. It’s common to start the day off with a huge breakfast or brunch (perhaps including donuts, cinnamon rolls or scones) and then end the day with a feast the size of Thanksgiving dinner! One way to alleviate this is to fill the day with healthy dishes and snacks – ones that aren’t filled with empty calories but make you feel good. That’s where this Eggnog Pudding comes in!

Because it’s an eggnog flavored dish, it’s filled with the nostalgic flavors of the season. The chia seeds are an extra nutritional bonus and help make this pudding. a pudding. Chia seeds are a wonderful source of protein and contain essential fatty acids. Foods like these help keep us feeling our best during the holiday season!

Vegan Eggnog Pudding (sugar-free, vegan and gluten-free)

1 cup Homemade Vegan Eggnog
1/3 cup Chia Seeds (1/4 for a creamier, less thick pudding)
Dashes of Nutmeg

In a small container, mix the chia seeds with the eggnog. Cover and place in the fridge for 2-4 hours. Stir, sprinkle with nutmeg and enjoy.

Serves 2

    Tried this with pomagranents and oranges. It was delicious! I added more chia seeds than called for. Merry Christmas to you girls.
