There are some days that just call for classic comfort food. I made this grilled cheese sandwich during a cold spring thunderstorm. The day felt dark and the rain was pouring. It had already been a long week (it was only Tuesday) and nothing would do but a warm grilled cheese.
I think a good grilled cheese is a mark of an excellent chef. It’s not hard science. You hardly need a recipe. But… it does takes some intuition and patience. A good chef knows the best cheeses to use, how to get that perfect buttered golden crust and how to keep the centers nice and hot. On the flip side, it’s the easy fall-back dinner for any weeknight. It’s what you might remember Mom or Dad cooking up for you after a long day. It’s love in a skillet! No matter your culinary experience, it’s about preparing fresh ingredients and using a little extra love. This grilled cheese recipe elicits nothing but delicious comfort and bright flavors. Get out your cutting board and favorite cheeses and make this slightly exceptional grilled cheese.

Delicious Veggie Grilled Cheese Sandwiches
4 slices Whole Grain Bread (I used oat bread)
Butter or Coconut Oil, for buttering bread
4 thick slices Mozzarella or Monterey Jack Cheese
2-3 slices Cheddar Cheese
4 slices Tomato
6 slices Avocado
2 teaspoons chopped Fresh Basil
Salt and Pepper
handful Baby Greens (I used baby kale)
Directions:
Butter or oil bread slices. Layer two slices of bread with mozzarella or Monterey and the others with cheddar. Place bread slices on a hot nonstick skillet. Cook until cheese is melted and the sides of the bread are toasted and golden brown. Add all the toppings. Layer on tomatoes, avocado and salt and pepper over the cheeses. Remove from heat and top with baby greens. Sandwich together and slice on a cutting board. Enjoy!

It’s funny how weather makes us yearn for certain types of food, and rainstorms definitely get my carb craving going! Crispy, melty grilled cheese is always a classic in my book, and I’m digging the veggie infusion here. Now I want a grilled cheese for breakfast, lol!

I recently had a grilled cheese for breakfast and it made for a great day! I recently just tried the tomato with cheese concept (fresh tomatoes over the Califlower fritters on here, and again with fresh tomatoes on a cheese quiche) and it’s a solid winner. Can’t wait to try this.
