A little over a year ago, my sisters and I had an idea to create a blog to share our favorite natural recipes with our friends and family. The blog would be a way for the three of us sisters to connect more over the many miles that separate us and for us to inspire each other to eat in a healthy way. As we shared a few recipes back and forth, the idea soon blossomed to create a blog that we could share with anyone and everyone. Naturally Sweet Recipes was then born, and soon became public! Since then, we’ve been thrilled with where this blog has taken us! We have learned so much while interacting with others, researching healthier alternatives and being inspired by so many amazing bloggers and readers. We are so thankful to all of you have ever read our blog, glanced at our pictures, liked us on Facebook or twitter, referred our site, left a comment, shared our posts, tried our recipes or shared your own wonderful blogs with us!

The best way to enjoy peanut butter is in a peanut butter cookie sandwich with delectable peanut butter cream filling. I love peanut butter, I love cookies and I love frosting! The three combined creates a treat I simply can’t resist. When these cookies have an extra soft, melt in your mouth texture and have that warm, fresh homemade flavor, they become quite addictive.
The softness of these little sandwiches create the look and feel of whoopie pies (which I love!). Whole, pure and natural ingredients also take these cookies up a notch, making them more hearty in nutrients and flavor. Never underestimate what whole wheat, real peanut butter and old fashioned oats can do for a cookie. Two buttery cookies with a crowning rich peanut butter filling makes for a pure peanut butter celebration!
Whole Wheat Peanut Butter Sandwich Cookies

Peanut Butter Cookies:
1/2 cup unsalted Butter, at room temperature
1/2 cup Natural Creamy or Crunchy Peanut Butter
1 cup Coconut Sugar
1/2 teaspoon Molasses
2 Large Eggs
1 teaspoon Pure Vanilla Extract
1/2 teaspoon Baking Soda
1/4 teaspoon Baking Powder
1/2 teaspoon Pink Salt
Dash of Cinnamon
1/2 cup Oats
3/4 cup Whole Wheat Flour
4 Tablespoons Unsalted Butter, at room temperature
1/2 cup Natural Creamy Peanut Butter
1 1/4 cup Coconut Sugar
1/4 cup Agave Inulin
1 Tablespoon Cornstarch
1/2 teaspoon Pure Vanilla Extract
2-4 Tablespoons Heavy Cream
In the bowl of a stand mixer or a large bowl, beat the butter, peanut butter, coconut sugar and molasses until light and fluffy. Add the egg and vanilla extract. In another small bowl, whisk all the dry remaining ingredients. Slowly add the dry ingredients to the wet until just combined. Bake at 350 degrees for 9-12 minutes. Allow to cool completely before frosting.
Cream together softened butter and peanut butter in a bowl until creamy and smooth. In a blender, pour in your coconut sugar, agave and cornstarch. Blend until light and powdery, about 1 minute. Add the powder mixture to the butter and peanut butter and beat until smooth. Add vanilla and combine. Add cream slowly to desired consistency. The amount of cream you use will vary depending on if your peanut butter is super oily and the consistency that you like your frosting.
Makes 12 Sandwich Cookies or 24 cookies

Agave Inulin is a nutritional powder. You can substitute it with a gluten-free flour or protein powder. You could use brown sugar in place of the coconut sugar but we hope you will try them with the coconut sugar because it gives these cookies fantastic flavor! :) Thanks!
